Chicken Fajitas
Ingredients - Serves 4
- 500g chicken breast, sliced into strips
- 2 peppers, sliced
- 1 large onion, sliced
- 1 sachet fajita seasoning
- 8 tortilla wraps
- 1–2 tbsp cooking oil
- 100g grated cheese
- 150g salsa
- Optional: sour cream, lettuce, tomatoes, avocado or sweetcorn
- Optional: lime juice for extra flavour
Steps
1. Prepare your ingredients
Slice the chicken into thin strips. Slice the peppers and onion into roughly similar-sized pieces.
2. Heat the pan
Add a little oil to a large frying pan and heat over a medium-high heat.
3. Cook the chicken
Add the chicken and cook for around 5–7 minutes, stirring regularly, until completely cooked through and there is no pink meat remaining.
4. Add the vegetables
Add the sliced peppers and onion. Cook for another 5 minutes, stirring occasionally, until the vegetables have softened but still have a little crunch.
5. Add the seasoning
Sprinkle over the fajita seasoning and add a splash of water according to the seasoning packet instructions. Stir everything together and cook for another 2–3 minutes.
6. Warm the wraps
Warm the tortillas according to the packet instructions—usually around 20–30 seconds in the microwave or briefly in a dry frying pan.
7. Build your fajita! 🌯
Put the chicken and vegetable mixture into a tortilla and add your favourite toppings.
